  • 1 cup dried navy or great northern beans, soaked overnight
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium sweet onion, finely diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste

Instructions

  1. Rinse beans under cold water and soak them overnight in a large pot of water.
  2. In a large pot over medium heat, add olive oil and sauté onions until golden (about 5 minutes).
  3. Add diced carrots and celery along with the ham hock; stir for about 4 minutes until veggies soften.
  4. Pour in soaked beans and chicken broth; add bay leaves, thyme, salt, and pepper. Bring to a boil then reduce heat to simmer.
  5. Partially cover the pot and simmer for about 1 hour or until beans are tender, stirring occasionally.
  6. Taste and adjust seasoning as needed; remove bay leaves before serving.
