  • 2 medium sweet potatoes (about 500g), diced
  • 1 can (400ml) full-fat coconut milk
  • 2 tsp curry powder
  • 1 can (400g) chickpeas, rinsed and drained
  • 2 cups fresh spinach
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups low-sodium vegetable broth
  • 1 tbsp fresh ginger, grated
  • Juice of 1 lime

Instructions

  1. Sauté chopped onion and minced garlic in a large pot with oil over medium heat until soft (about 3 minutes).
  2. Stir in curry powder and grated ginger; cook for another minute until fragrant.
  3. Add diced sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until tender (about 15 minutes).
  4. Stir in rinsed chickpeas and coconut milk; simmer for an additional 10 minutes.
  5. Fold in fresh spinach until wilted (about 2 minutes). Squeeze lime juice over the top before serving.
