- 1 can (400ml) full-fat coconut milk
- 2 tsp curry powder
- 1 can (400g) chickpeas, rinsed and drained
- 2 cups fresh spinach
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups low-sodium vegetable broth
- 1 tbsp fresh ginger, grated
- Juice of 1 lime
Instructions
- Sauté chopped onion and minced garlic in a large pot with oil over medium heat until soft (about 3 minutes).
- Stir in curry powder and grated ginger; cook for another minute until fragrant.
- Add diced sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until tender (about 15 minutes).
- Stir in rinsed chickpeas and coconut milk; simmer for an additional 10 minutes.
