Ingredients

  • 1 lb Italian sausage (sweet or spicy)
  • 4 medium potatoes (russet), diced
  • 2 large carrots, sliced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese, softened
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing potatoes and slicing carrots and celery.
  2. In a skillet over medium heat, brown the Italian sausage until cooked through, breaking it into smaller pieces.
  3. Transfer the browned sausage to the Crockpot. Add diced potatoes, carrots, celery, garlic powder, onion powder, salt, and pepper.
  4. Pour enough chicken broth into the Crockpot to cover all ingredients completely.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in softened cream cheese until fully blended.
  7. Serve hot and garnish with fresh herbs or shredded cheese if desired.
