- 4 medium potatoes (russet), diced

- 4 cups low-sodium chicken broth

- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Prepare your ingredients by dicing potatoes and slicing carrots and celery.
- In a skillet over medium heat, brown the Italian sausage until cooked through, breaking it into smaller pieces.
- Transfer the browned sausage to the Crockpot. Add diced potatoes, carrots, celery, garlic powder, onion powder, salt, and pepper.
- Pour enough chicken broth into the Crockpot to cover all ingredients completely.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in softened cream cheese until fully blended.
