  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh carrots, sliced
  • 2 cups celery stalks, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 2 cups uncooked egg noodles
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Prep your ingredients by washing and chopping all vegetables.
  2. Layer the chicken at the bottom of the crockpot, then add carrots, celery, onion, garlic, thyme, bay leaves, salt, and pepper.

  6. Shred cooked chicken with two forks and return it to the soup before serving.
