  • 2 cups fresh spinach
  • 8 oz baby bella mushrooms, sliced
  • 4 garlic cloves, minced
  • 1 medium sweet onion, chopped
  • 10.5 oz can cream of mushroom soup
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • 3 cups cooked rice (white or brown)

Instructions

  1. Prepare your ingredients: Chop the onion and garlic, slice the mushrooms, and rinse the spinach.
  2. Optional: Sear the chicken in a skillet over medium heat until golden brown on both sides.
  3. Combine ingredients in the crockpot: Place the seared chicken at the bottom of the crockpot, then add onions, garlic, mushrooms, and spinach on top.
  4. Make the sauce: In a bowl, mix cream of mushroom soup with chicken broth until smooth. Pour over the ingredients in the crockpot.
