  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 tsp olive oil
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese (softened)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 cups fresh spinach or kale
  • 16 oz store-bought gnocchi

Instructions

  1. Prep your ingredients by dicing the chicken and chopping the carrots and celery.
  2. In a skillet over medium heat, sauté onions and garlic in olive oil until translucent (3-4 minutes).
  3. Transfer to the crockpot with chicken, carrots, celery, oregano, thyme, salt, pepper, and chicken broth. Stir well.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Once cooked, stir in softened cream cheese until melted.
  6. Add gnocchi about 30 minutes before serving along with spinach or kale.
