- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 2 tsp olive oil
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cups low-sodium chicken broth
- 8 oz cream cheese (softened)
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 cups fresh spinach or kale
- 16 oz store-bought gnocchi
Instructions
- Prep your ingredients by dicing the chicken and chopping the carrots and celery.
- In a skillet over medium heat, sauté onions and garlic in olive oil until translucent (3-4 minutes).
- Transfer to the crockpot with chicken, carrots, celery, oregano, thyme, salt, pepper, and chicken broth. Stir well.
