Ingredients

  • 2 cups cheese tortellini (fresh or frozen)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups fresh spinach
  • 4 garlic cloves, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by dicing carrots and celery and mincing garlic.
  2. In the crock pot, combine tortellini, chicken broth, heavy cream, spinach, garlic, carrots, and celery.
  3. Season with Italian seasoning, salt, and pepper; stir well.
  4. Cover and cook on low for 4 hours or high for 2 hours.
  5. In the last 15 minutes of cooking, stir in fresh spinach until wilted. Serve hot topped with extra Parmesan cheese.
