  • 4 cups ripe tomatoes, chopped
  • 1 cup fresh basil leaves, loosely packed
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and chop tomatoes into quarters, leaving the skins on.
  2. In a large pot over medium heat, heat olive oil and sauté diced onions until translucent (about 5 minutes).
  3. Add minced garlic; cook for another minute until fragrant.
  4. Stir in chopped tomatoes, salt, and pepper; cook for a few minutes.
  5. Pour in vegetable broth and bring to a simmer; let bubble for about 20 minutes.
  6. Just before blending, stir in torn basil leaves.
  7. Blend the mixture until smooth using an immersion blender or traditional blender.
  8. Adjust seasoning if needed and serve hot with fresh basil garnish.
