  • 1 lb lean ground beef or turkey
  • 1 medium onion, diced

  • 28 oz canned crushed tomatoes
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt.
  2. Place the squash halves cut side down on a baking sheet lined with parchment paper. Bake for about 40-50 minutes until tender.
  3. While the squash bakes, heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until translucent.
  4. Stir in ground meat, breaking it apart as it cooks until browned (about 8-10 minutes).
  5. Add canned tomatoes and Italian seasoning; let simmer on low heat for 20 minutes.
  6. Once baked, scrape out spaghetti squash strands using a fork and mix them gently with the meat ragu in your skillet. Serve hot.
