- 2 cups baby spinach
- 9 oz cheese tortellini (fresh or frozen)
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 tsp dried Italian herbs (basil, oregano, thyme)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping garlic, carrots, celery, and chicken into bite-sized pieces.
- In a large pot over medium heat, add olive oil and sauté diced carrots and celery until tender (about 5 minutes).
- Stir in chopped chicken and minced garlic; cook until the chicken is golden brown and no longer pink (7-8 minutes).

- Add cheese tortellini and dried herbs; cook according to package instructions (usually about 5-7 minutes).
- Fold in baby spinach during the last minute of cooking until wilted.
