Ingredients

  • 4 ears fresh corn on the cob
  • 1 medium red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped (or parsley)
  • Juice of 2 limes
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Shuck the corn, removing all silk. Rinse and set aside.
  2. 2. Boil a large pot of salted water. Add corn cobs and cook for 5-7 minutes until tender. Alternatively, grill for 10-15 minutes until charred.
  3. 3. While corn cooks, dice the red bell pepper and onion into uniform pieces.
  4. 4. Once the corn is cooked, cut the kernels off the cob and place them in a large bowl.
  5. 5. Add diced veggies, cilantro, lime juice, olive oil, salt, and pepper to the bowl. Toss gently until all ingredients are well mixed.
  6. 6. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
